Free fatty acids are used in energy studies of foods. Free fatty acids are usually high in energy. The full method is available on request and conforms to AOAC methods 1980, BS 684 and IUPAC 1979.

If the sample is from a bulk supply of fat/oil, ensure that the sample is well mixed. If the sample has been extracted from a foodstuff on Soxhlet apparatus the analysis may be done in the extraction beaker or flask.

In the method a known amount of fat is dissolved in a diethyl ether, alcohol and phenolpthalein solution. The solution is then titrated with Sodium hydroxide solution.
